Found a decent red curry from the whole foods store today as I was craving a flavorful dinner. Fairly simple to make and if done correctly, you can have this meal ready in about 30 mins.
• 1 block of extra firm tofu
• 12 oz. jar of Thai red curry cooking sauce
• 2 tbsp virgin olive oil
• 1 tbsp toasted sesame oil
• 5 garlic cloves, minced
• 1 spinach bunch
• 1 1/2 cup quinoa
A pot for quinoa to boil for about 20 minutes, another for the spinach to soak up a tbsp of toasted sesame oil and garlic (5-10 mins), and the last pot for the tofu to fry in 2 tbsp of olive oil and soy sauce. Add 12 oz. jar of desired curry sauce and allow to simmer on fried tofu for an additional 15-20 mins or until thickened. Serves 2-4.
Not gonna lie, it’s a depressing thought to be giving up my love for Chick-Fil-A and all things meaty and delicious. However, I’ve done a bit of research - enough to know that this is a diet rich in long-term benefits in multiple aspects. I’m putting this to the test with an active lifestyle to see how my immune system holds up along with muscle recovery paired with my daily nutritional regimen.
The soy bean has long been criticized for its femininity compared to the almighty whey & casein proteins, although science is yet proving its power may be equal or even greater. One of the many aspects that I’ll be exploring.
At the end of the day, my main goal is to live a truly healthier lifestyle than last year - in hopes of inspiring others to do the same. Hoping for the best!
